Prickly Piping

I'm wild about the look of this cake! It takes a little planning to keep the lines straight, but the actual piping is not terribly challenging. 


After a crumb coat I chilled the cake for ~30 minutes. Then, I scored some guide lines on the sides. I know myself, and without some straight lines I'd definitely go off course. 


After I finished the sides, I did the top. Then, I got it back in to the fridge because cream cheese frosting doesn't like hanging out in a hot kitchen. 


I used a small/medium star tip. It's important to have good coverage with the crumb coat to help the piping cling to the cake, but as much as you want the coat even, it's also important to not have it terribly thick. It would be total frosting overload! 

This particular cake was for a birthday celebration! I'm thrilled to be a part of someone's happy day.
