New Italian Cream Cake


Toasted coconut, toasted pecans, cream cheese, buttermilk...these are the dynamite flavors in this special cake. Have you guys had Italian Cream Cake before? It's a Southern cake, and I'm not sure if it's popular elsewhere? Please treat yourself and make one if you haven't had the pleasure. 


I use a version of Cook's Country's recipe. I love that the coconut is toasted, powdered, and steeped in buttermilk to soften it a bit. The flavor is creamy like the name leads you to believe. I'm not sure why it's "Italian" though? Maybe someone thought cream cheese was Italian-ish? IDK. 


Traditional Italian Cream Cake is frosted with cream cheese frosting and decorated with chopped pecans and coconut. I wanted this one to look a little bit more modern. So, I made a pecan butter and mixed it in to cream cheese frosting. The dark bands are the pecan cream cheese frosting. Then I did something similar with the coconut. The coconut is the light band. 


The layers of cake are filled with cream cheese frosting, and I used a Russian piping tip to create the cream cheese flowers on top. I wanted to eat all the scraps and extra frosting with this cake, but I couldn't because my family was faster than me! Wah! 

This cake was made for a birthday celebration. I hope that it was a sweet day of fun! ♥

***Here's another Italian Cream Cake I made a while back. It was for my mom on Mother's Day. I poured caramel sauce on it for good measure. I'm pretty sure it made me her favorite child. Sorry, bro.
