Mint Hot Chocolate Cake

These mint hot Chocolate cakes will forever be special to me. If you were watching The Great American Baking Show last Thursday, you saw that they were a part of my final showstopper. A lot went wrong with that challenge. When my puffs stuck and became unusable, I nearly panicked. I kept at it though and edited out any extras that weren't necessary so that I would have time to remake my puffs.

This cake was planned to have a homemade marshmallow and a sugared mint leaf on top. I had to abandon those plans. At first, it was hard for me to see this cake as anything but a failure since it wasn't exactly as I'd planned. But, with some time, I've become really proud that I was able to quickly decide what and how to edit. 


To watch the finals, I invited a bunch of friends and family over to watch with us. I made all of my showstopper desserts. Then, my daughter got sick with the stomach flu. We had to cancel the whole thing. Once again, things didn't go as planned. I was sad, but I'm getting better and handling plans changing with so much practice! 

The picture above is a GIANT scrap that I trimmed off the cake. When I was sad the party was canceled, I may or may not have had it as my piece. ;)

  1. Amanda i love what you said at the end of the finals. sounds like you want to take your cooking/baking to a new level in your life. i believe cooking is something that never grows old. always something new to learn and create. praying you have your family support. can't wait to see what next.
