Candied Grapefruit Peel

Candied peel. I've tried this once before and it was a major flop. I don't have any pictures of that or else I'd be happy to embarrass myself for your laughter. This time went much better. I used this recipe from A Beautiful Plate. It was easy to follow and lead to a successful finished product. Yay!

The pictures of the process are dark because I wanted to make this is peace. That means, I had to wait to start until my kiddos were asleep. 

First, I cut the grafruit in to quarters. Then, I aggressively scraped out the fruit and pith. Like, super aggressively. 

Next was the blanching process...three times! 

You finish the cooking process by cooking the peel in a sugar syrup. This is when it becomes candied. 

Drain, roll in sugar, dry. Voila! 

It is candy, but since it's homemade out of fresh fruit I like to think that it's a tad bit healthy.
