Roasted Pumpkin Seeds

After carving our pumpkins, we were left with a big bowl of gunk and seeds. I didn't want to trash it all, so I roasted the seeds. It was so simple. I feel a tradition coming on. 

After separating the seeds from the flesh, I coated the seeds lightly in oil and salt...

Then, I roasted them at 300F for 45 minutes (tossing them every 15 minutes)...

Now, we have a delicious and healthy snack that could have ended up in the trash. Yep, I feed my family trash. Hehe.
