Vanilla Apricot Buttercream

Here's a quick buttercream recipe, just in case you want to shake things up a bit.

Jam Buttercream 
1 c butter
4-5 c powdered sugar
1/2 c jam or preserves
1 tsp vanilla or other extract
1 tbsp milk or cream
Cream the butter until it is smooth and light yellow.
Add in powdered sugar 1/2 cup at a time. Mix in the jam and vanilla.
Add milk or cream as needed to loosen, and add powdered sugar as needed to firm it up.

I frosted a yellow layer cake with an apricot version of this frosting.  I was in a casual mood, so I let the cake have a peek-a-boo finish.  Trust me, no one complained.  The apricot flavor was very subtle.  This was nice, but, if you would like a more pronounced flavor, it could be intensified by filling the layers with jam.  Then, you could frost the outside with the flavored buttercream.  Endless possibilities!
