Lemon Meringue Pie

A sweet slice of sunshine on a rainy day. It's a mix of recipes, as usual. I'll get my recipe links in order at some point, and I'll do a more detailed post. 

In the meantime, here are three LMP making tips:

1-Watch the meringue closely during the browning process. It goes from white, white, white, to burning in a hurry. Don't ask me how I know. ;)

2-Blind bake your crust until it is 95% done before filling. It doesn't change much in the time it takes to bake the filling and meringue. 

3-Don't fill your pie with Jello box stuff. It's so super easy to make from very simple ingredients. If you can measure, stir, and boil, you've got all of the skills you need.
