Seven Minute {Blood Orange} Frosting

If you've had a classic southern coconut cake, you've probably have seven minute frosting.  It's a meringue style frosting that is easy to make, and even easier to eat.  

I decided to shake it up a bit by making mine orange flavored.  I had some blood oranges on hand, and with a quick search a found this recipe by David Lebovitz.  If I had to cook without online recipes I'm pretty sure we'd be living on scrambled eggs and grilled cheese.

The only edit I made to Mr. Lebovitz's recipe was blood orange juice and zest instead of plain orange juice and zest.  The result was delicious, and I think it would be an excellent dreamy pink frosting option for a Valentine's Day treat.

I made my go-to chocolate cake recipe by Add a Pinch.  I only used one round, sliced it in half, and generously spread on the frosting.  I saved the other round for a future dessert that I've been plotting (evil laugh here).

To finish the cake, I topped it with sweetened shredded coconut.  It looks like a giant snowball!  You might be wondering if chocolate, orange, and coconut are allowed to play together on the same cake? The answer is a solid "yes!".

The frosted cake doesn't need to be refrigerated, but it also doesn't store well for more than a day.  So, you should probably have some friends over to share with you.  They'll be your friends forever. ♥
