Chocolate Chip Macaroons

I didn't intend on turning this blog into a food/cooking blog.  Somehow it seems to be going in that direction, so roll with me.

Here's a recipe that I made this morning for breakfast.  I know, I know, cookies for breakfast? Oh, well.  It happened. It's a modified version of The Boho Mama's recipe.  They aren't the most glamorous looking cookies, but they're tasty.  Isn't that the point?

Chocolate Chip Coconut Macaroons
1 1/4 cups shredded unsweetened coconut
2 egg whites
1 tsp vanilla
1/4 tsp salt
1 tbsp cocoa powder
1/2 cup powdered sugar
1/2 cup semisweet chocolate chips

Preheat the oven to 350 degrees.

Combine coconut, egg whites, vanilla, salt, and cocoa powder in a large bowl.  Add in powdered sugar, and stir until the mixture comes together.  Fold in chocolate chips.

Form into one inch balls, and bake for 10-12 minutes, or until they just start to brown.

Let cool, and enjoy!
