Cookies and Blankets

Hopefully today the doctor will tell me I can get back to normal pregnancy activity levels.  I am not good at sitting around.  To keep myself busy I have been knitting blankets and Googling recipes obsessively.  The knitting has been a blast, and at least I feel like I am being productive.

As for the recipes, I can't do anything to strenuous, so I've been looking for the easy version of everything.  The best find so far has been a recipe from cooks.com for peanut butter cookies.  They are so simple that I couldn't believe that they would be good, but they were great!

Peanut Butter Cookies
Ingredients
1 cup peanut butter (crunchy or smooth)
1 cup sugar
1 egg

Directions
Preheat oven to 350°F.

Mix the sugar and egg together, then add the peanut butter.  Form 1 inch balls, roll in sugar, place 1/2 inch apart on a baking sheet, and press with a fork.

Bake 10-12 minutes.  Cool and enjoy!

    Those cookies sound wonderful, but not very diabetic friendly. ;)
