Granola, Take One

We buy a lot of granola at our house.  Unfortunately, quality granola can be quite expensive.  Also, we are picky, which means sometimes we don't even like what we've bought.  These reasons have sent me on a mission to make granola at home (super sexy, huh?).  I looked at a few recipes and modified them in to something that I thought we would enjoy.  I'm super pleased with the result.  This morning I woke up ready to have some more.  Now, I just need to see if it passes my husband's inspection.  Until further notice, this recipe will be called Granola, Take One.


Granola, Take One
Ingredients
1 1/2 c rolled oats
1/2 c sliced almonds
1/4 c unsweetened shredded coconut
1 1/2 tbsp brown sugar
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/2 tsp salt
1/6 c honey
1 tbsp vegetable oil
1/3 c dried cherries

Directions
Preheat oven to 300°F.  Line a baking sheet with parchment paper.
Mix first 7 ingredients in a large bowl.  
Heat honey and oil, either in a saucepan or the microwave.  Mix together, then pour over oat mixture.
Stir to combine, and spread on prepared baking sheet.  
Bake until desired color is reached.  Stir granola every 10 minutes.  Total bake time is 30-40 minutes. 
Remove, add dried cherries, and cool.
