Vacation Cookie

Happy Summer!  With Memorial Day as the unofficial start of Summer I wanted something tropical.  If I had it my way, I'd jet off to Harmony Hotel in Nosara, Costa Rica for surf camp and yoga, but instead I will satisfy my tropical craving with a coconut cookie.  I found this recipe on Foodgeeks.  It's easy, and there are only six ingredients.  They turned out like tasty, little granola bites.  
Coconut Banana Cookies
Ingredients:
  • 3 ripe bananas
  • 1 cup golden raisins (sultanas)
  • 2 cups rolled oats
  • 1/3 cup coconut oil, melted
  • 1 tsp. vanilla extract
  • 1/3 cup unsweetened shredded coconut
Directions:
1. Preheat oven to 350° F.
2. In large bowl, mash the bananas, stir in golden raisins, oats, coconut oil, vanilla, and shredded coconut. Mix well and allow to sit for 15 minutes.
3. Drop by tablespoonfuls onto ungreased cookie sheet and bake for 15-20 minutes. Yield 32.
